nutrasumma-86379925I recently became an ambassador for nutrasumma by winning a #recipeupgrade contest that they featured on Instagram back in December. The idea was to use their protein powder and step outside the box of making the standard go-to shake or smoothie. I always love a food cooking challenge so I created 5 different recipes using several of their protein flavors, both sweet and a savory. Below are the 5 creations I did. Chocolate Protein Oatmeal

This was a post-contest dish but thought I would share the easy recipe!

Chocolate Protein Oatmeal 

  • 1/3 cup of Quick Rolled Oats
  • 1 scoop nutrasumma Chocolate Protein

Cook oats first then add protein powder. Slowly add additional water as you mix in the protein to get the perfect oatmeal consistency that you prefer! I topped it with mixed berries, chopped nuts and mini vegan chocolate chips.

I will be writing up a review on them in a few weeks, as anything takes time to work into the body. I must say that only being 3 days in, I am quite happy and liking them!

Over the last 8 years I have done Thanksgiving but this will be one of the first where we will be out of town for the holiday. I have surrendered control of Tom the Turkey and will be enjoying someone else’s Tom….which is a bit hard for me as I have mastered the brining perfectly, not to mention my healthy spin on side dishes.

I like to follow in the footsteps of those who first celebrated Thanksgiving, the Pilgrims and Indians. They all brought a yummy dish to share in celebration of a plentiful harvest and that in itself is much to be thankful for.

FRIENDS Thanksgiving

Logan (my son, 5 at the time) and I made my our first homemade apple pie from scratch! I sure wish I could remember the recipe! I did however google “easy apple pie” and this was exactly that. One thing I recall is using 1/2 Granny Smith Apples and 1/2 Pink Lady’s as I love the tart from the Granny and the sweet of the Lady. OH! And I also did a little extra on the spices.

This year I was itching to cook something for Thanksgiving before we took off to Denver so I made a healthy, dairy free version of mashed potatoes. These creamy sweet things where exactly what I enjoyed, by the spoonful!

Sweet Mashes Cauliflower

  • 1 head of Cauliflower chopped
  • 1 small Golden Yam peeled and chopped
  • 1/4 cup Unsweetened Almond Milk
  • Salt and Pepper to taste
  • Boil the cauli and yam until soft, drain water then place in a mixing bowl. Add unsweetened almond milk and mix until soft and fluffy. Salt and pepper to taste.

Cashew Chicken

Love this simple stir-fry that takes no time at all! My mom made it for me growing up and I have added a few more veggies but everything else has stayed the same.

Cashew ChickenIt was always served over a bed of white rice but it also works great with brown rice, quinoa or barley!

Ingredients
  1. 2 Chicken Breasts thinly sliced
  2. 1 cup Brown Rice
  3. 2 cups Chopped Veggies: Asparagus, Bell Peppers & Mushrooms (or pick your favorites)
  4. 1 tbsp Olive Oil
  5. 1/2 cup Cashews chopped
Sauce
  1. 3 tbsp Cooking Sherry
  2. 3 tbsp Lite Soy Sauce
  3. 1 tsp sugar (organic stevia for a healthier option)
Instructions
  1. In a pan cook Chicken in 1 tbsp Olive Oil on medium heat. Once all sides are browned add chopped veggies and sauce, reduce to low continue cooking till chicken is thoroughly cooked and veggies are al dente.
  2. Serve over brown rice and top with Cashews.
  3. ENJOY!

Vegan PB & Banana Nut Protein Balls

After stewing for a few weeks on how to make these along with a few failed attempts, SUCCESS!!! I believe these are my favorite protein balls yet! The perfect serving for either a pre or post work out fueling food! 

Vegan PB & Banana Nut Protein Balls1 serving is 4 of these little balls or one giant protein ball. Either way you want to enjoy it, it’s a win win!

  • 1 Scoop Banana Nut Protein Powder by RawFusion
  • 2 tbsp PB2
  • 3 tbsp Water (slowly add more IF needed, you want a dryer “cookie dough” consistency) 
  • 1 tbsp Creamy All Natural Peanut Butter
  • 1/2 tbsp Raw Peanuts (chopped after you measure)

Macros: 31g of Protein/18g Carbs/12g Fat/287 Calories

*Note: I have tried other Peanut Butter & Banana flavored protein powders to get the perfect texture, flavor and macronutrients, this combo by far was the best in ALL categories

Slow and Steady Wins the Race

Turtle Race

Yes, 13.1 miles seems a bit daunting if you have only run a mile here and there or even participated in a 5k. When broken down over the course of a few months, it really isn’t so bad. As the famous saying goes, “Slow and steady wins the race.”

Below is the training plan that I used 4 years ago. Prior to that I had not run a solid mile since high school which was 12 years before that. I wouldn’t really call it a running…more like a jog/walk. Ms. Valdez would be waving her clip board for me to hurry up and finish, “Shouldn’t take you 18 minutes.” Class is 45 minutes, what’s the rush???

.13.1 Training Plan

Dates and day of the week will vary based on when your race date falls

  • A = Active Day, weights, crossfit, HIIT etc
  • Number listed = miles for the day to run
  • R = Rest
  • Total = Total miles ran for the week

When you start your training don’t focus on speed. The idea is to find a comfortable pace where you are able to control your breathing run without needing to stop or suffer through a side ache. Speed will come in time as your body acclimates to running longer distances.

Run Redd Run

 

Set up your playlist for the race and even train with the same playlist. Something I like to do is pick one song on my list and that becomes my theme song. As I train that song stands out more than the others. Music is huge for me so I like to associate music to memories. Each time I’ve run a race, my theme song comes on and I take in my surroundings; who is running next to me, what buildings or scenic things are around me. Most of the time I find myself head down looking at the road not taking in the city that I am running through.

 

 

POST RACE MUSIC IMPACT: When my theme song comes on whether I am at the gym, in my car or even at the store, I am quickly taken back to relive that race moment. As goosebumps occur, I’m grinning from ear to ear!

Fall’s Creamy Carrot Mac n Cheese

A challenge was presented to me of incorporating carrots into a dish and my cooking wheels began to spin. I have already done carrot cake protein pancakes so I couldn’t do that again and I just made Carrot Ginger Soup a few weeks back. Mac n Cheese is a fam fave as a main dish or even as a side dish in my house. I usually reach for the box of Annie’s Organic but I decided to make my own batch.

Creamy Carrot Mac n Cheese

Ingredients
  1. 2 cups Whole Wheat Pasta
  2. 1/2 cup Carrot Puree or (4oz organic carrot baby food)
  3. 4 oz Plain Goat Cheese
  4. 1/2 cup Unsweetened Almond Milk
  5. Salt & Pepper to taste
Instructions
  1. In a large pot bring water to a boil and add noodles. Be sure to cook according to the directions on the box.
  2. In a smaller sauce pan add almond milk, carrot puree and goat cheese. Cook on medium to low heat stirring occasionally. You want to make sure that the sauce begins to thicken and the goat cheese is fully melted.
  3. Once noodles are finished, drain and rinse thoroughly. Add pasta to cheese sauce and mix until pasta is fully coated.
  4. Salt & Pepper to taste
  5. ENJOY!
Notes
  1. When reheating for leftovers (IF there is any), add a splash of almond milk to create the creaminess. Pasta tends to soak in any extra moisture from the sauce.

Recycled Greens

I love Costco’s fresh organic produce but some weeks I just can’t consume them all. Spinach is one of those, love it but can only have so many salads a week.  After checking the expiration date I realized there was NO WAY I could consume 5-6 cups of spinach in less than 24 hours! Time to recycle!Spinach

  • Steamed the remaining spinach till soft and tender
  • Place in a blender, I use the Magic Bullet
  • Pour into an ice cube tray to freeze
  • Once fully frozen remove from tray and place in a zip lock bag

Hiding greens in marinara sauce or other foods for kids and even your significant other

I began using Hodgson Mill Buckwheat Pancake mix after a recent discovery that my body doesn’t process certain oats, wheat or white flour very well. I actually use the Eat Right 4 Your Type (blood type) as a reference for which foods work well with my body. Since I’m A+, buckwheat is very beneficial for me. After making the switch from oatmeal to pancakes for my daily breakfast, I am no longer dealing with stomach issues and have a happy belly!
